Truth be told, I am not one to celebrate Valentine's Day. In fact, I told my husband years ago that we could skip it and simply celebrate "us" on our anniversary. But two years ago, when our daughter was at preschool, I suggested that we start celebrating it for the kids. He was delighted to learn that this meant cupcakes, cookies and treats to eat.

Now that I am in the candy business, I can't really get away from Valentine's Day. In fact, I love that I am providing a handmade, quality gift for people over the mass-produced, store-bought "candy" that fills the aisles of the stores around this time.

A friend at work placed an order to give to her children- marshmallow and custom cookie pops, bags of marshmallow hearts- and I thought about how nice it is for those kids to receive real treats, made with {real} love.

If you do intend to show someone your love tomorrow, think of purchasing or making something with value. With meaning. Something real. Flowers are nice. And so are chocolates. But what about something handmade by a local artist or bakery? Or even better, how about giving your time? A homemade meal? Or offer to send your wife to the salon for a pedicure? (ahem)

I know what I will be doing. Making marshmallows. Because I can't take a day off from that. But that's okay. Because I really do love what I do.

I {heart} French Toast

French Toast. A perfect breakfast for your sweetie. Using a large cookie cutter, make a heart from fresh bread, fry in butter, and serve with the best maple syrup and strawberries.

This is what I am hoping to wake up to tomorrow.

Spring is in the air...sort of

Fresh air. Sunshine. Lemons.

Ahhh, I can feel spring coming. Well, not exactly. We just happen to be having a warm (meaning above zero) day with the typical winter sunshine that we get here in the Bulkley Valley. But, I will take it. And I opened the windows for some fresh air. That's the other part of living in the country- FRESH air. And the sound of birds being the only sound that drifts in the windows.

This sunny mood has me thinking of spring and all the things I love about it. Easter has to be my one of my favorite holidays. Perhaps because it often lands around my birthday (ahem) but I love the tulips and light food and baked goods that come with Easter. And the chocolate of course.

Last spring was a very busy season for Kimberley's Kitchen and this year will be no exception. With custom orders, wedding favor orders, and wholesale requests pouring in, there will be no time to stop. Well, maybe for a minute to smell the flowers.

Many of the popular flavors will return, such as lemon, lavender, earl grey, and new treats as well. Also, I have sourced some lovely boxes for shortbread that will make for pretty gifts for Easter and Mother's Day. I will have the ever-popular coconut Bunny and flower marshmallow pops too. Super sweet treats to tuck into your little one's Easter basket.

I hope that wherever you are, a little breathe of spring will come your way just to remind you that soon it will be here.

I {heart} Conversation Hearts

I am not a big fan of store-bought candy. But there are some treats that I enjoy from time to time that fall into the "nostalgic" candy category. Conversation Hearts are one of those treats that I indulge in around the holiday of love.

When I stumbled upon a recipe to make them at home, I tried it immediately. And discovered that they are as easy as pie. Well, easier, in fact.

This is a great candy to make with your kids and the possibilities are endless. I am already plotting my Easter, Halloween, an Christmas treats with variations on color, flavor, and shape.

Here is the recipe that I used. The above variations are Coconut, Lavender, Cinnamon and Peach.

I will be customizing these for Valentine's Treats using an edible marker. Can you imagine how sweet it would be to give a heart with a name or custom message?

I {heart} Shortbread

I have a healthy obsession with shortbread. Real, buttery shortbread. Simple to make and perfect with tea, it is my go-to cookie to bake.

I started selling shortbread when I discovered how much I love all the varieties of flavors that compliment the butter so well. Lemon, Vanilla, Earl Grey Tea, Lavender, Chai, Lime, Espresso- I could go on. Pictured above are my brown sugar Vanilla Shortbread dipped in dark chocolate. That's real, Callebaut chocolate. A few of these went down just fine with a cup of homemade chai tea earlier this evening. And I think they will make a sweet treat for those I love. But I will have to make more. These won't last for long.

Kimberley's All Butter Shortbread

*this is a great recipe for kids, with only a few ingredients, have your helper mix it for you and allow them to shape some of the cookies

1 stick unsalted butter, room temp

1/2 cup organic sugar (you may sub confectioners sugar)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup flour

*cream butter in medium bowl, add sugar, blend

*add vanilla, blend and mix until combined

*add flour, salt, blend

*you may roll into a log and chill (slice when you want to bake) or to cut into shapes roll between two floured pieces of parchment to 1/4 inch thick and cut

*bake in a 350 degree preheated oven on silpat/parchment lined cookie sheet

*bake 12-15 mins

*makes 12-24 depending on size

Flavor Variations

*this is the fun part*

Substitute the following for the vanilla:

*1 teaspoon lemon or lime zest

*finely ground tea such as Earl Grey

*finely ground lavender (only use culinary lavender)

*use your imagination and experiment!

I {heart} Homemade S'mores

Have you ever enjoyed a homemade s'more? Well if you like the 'original' then you will be sure to love the homemade variety.

Homemade cookies, smothered in dark chocolate with warm, gooey handmade gourmet marshmallows. One is enough. But have two just in case.

Here at Kimberley's Kitchen, I have been making S'mores Kits for over a year now. With seasonal shapes and flavors (the heart above has a Cinnamon Marshmallow), S'mores Kits are a fun treat for big and little kids. I can even customize them for a party or family camping trip.

Good any time of year, there's always room for "S'more".

I {heart} Cranberry Scones

I have a dream. I wake up on Sunday morning to the smell of a perfect latte and homemade scones waiting for me. With two little ones and a busy life, like all of you, this will remain a dream I'm sure.

So I bake myself scones almost every Sunday. They are one of my favorite baked items and I love making them. This weekend, my daughter and I made Heart scones with cranberries and they didn't last long.

I am a scone snob. I am the first to admit. The recipe I use is a variation from a Scottish recipe that I love. It is mostly butter, cream, and a little bit of the rest. I'm a purist. No vegetable oil or funky flavors. I stick close to the original. The furthest I stray is a maple scone recipe from Ina Garten, that is quite heavenly.

Bake up a batch and enjoy the results. Quick and easy to make, this is a great one for the kids. Have them mix the ingredients or invite them to cut out the shapes. Mini scones work really well and are a perfect size for the little ones.

Kimberley's Kitchen ~ Scone Recipe

*preheat oven to 400 degrees

*in a medium bowl, mix 2 cups flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. (you may sub 1/2 cup whole wheat flour for all purpose flour for a nice, nutty taste and more whole wheat)

*cut in 1 stick cold, unsalted butter until a course crumb

*dig a well, pour in 1 beaten egg and 1/2 cup cream (can sub milk)

*mix until combined, don't overmix

*turn onto lightly floured surface and pat into 1 inch thick round

*slice in wedges or cut shapes (re-roll scraps to use remaining dough)

*place on parchment or silpat lined cookie sheet

*brush tops with cream and sprinkle with organic sugar, if desired

*bake 15-18 minutes

*cool on wire rack

Enjoy! With lots of butter!

I {heart} Jam Thumbprint Cookies

Of all the things I bake, this is my Dad's favorite cookie. Simple, buttery, sweet Jam Thumbprints. And pressed into little hearts makes them just that much sweeter.

I stumbled upon this wonderful recipe in Every Day Food Magazine a few years ago and it is still my favorite- simple enough to do with the kids too. No fancy mixer needed- a good bowl and spoon and you are set! (the recipe below is half the original recipe so you can easily double this if you plan to make a lotta hearts happy)

*1 1/2 sticks unsalted butter, at room temp

*1/2 cup granulated sugar

*1 egg

*1 3/4 cups all purpose flour

*jam of your choice (I used raspberry but others work well, such as apricot, strawberry, blueberry, you get the idea)

*preheat oven to 350 degrees

*mix butter and sugar until fluffy

*add egg and mix to combine

*add flour and mix to combine

(No need to chill, this dough is ready to go, but you can save it in the fridge or freezer for later use if you wish. Just bring to room temp when you plan to use it.)

For traditional cookies, roll 1 tablespoon of dough into ball, slightly flatten and place on baking sheet. Repeat with remaining dough.

*for heart variation, roll ball and form into teardrop shape, slightly flatten. Repeat and attach second teardrop to form heart*

repeat with remaining dough

*Moisten finger with water and lightly press into each cookie

*fill with jam

*bake for 15-20 minutes

*allow to cool

Eat~ a perfect tea time treat

I {heart} Cookie Pops

Cookies on a stick. Does it get any smarter? And what a sweet treat for the little ones. These cookie pops will be all dressed up in bags with ribbon and heart tags for classroom gifts.

And here's a mini version that's nice for the preschool crowd. The teacher will thank you!

Cookie pops are simple to make and a great project with children.

All you need is:

My favorite sugar cookie recipe (you can halve the recipe for the minis or if you only need to make a few)

Heart cookie cutters

Wooden popsicle sticks or lolipop sticks (as shown above)

Candies or sprinkles for decorating

Cello or glassine bags

Ribbon and handmade tags

*Prepare my favorite sugar cookie recipe (from Martha Stewart, of course) the day before you want to bake the cookies and leave to chill in the fridge.

*When ready to bake, preheat oven to 325 degrees and remove dough from fridge, allow to warm up so that it is pliable.

*Lightly dust work surface with flour and assemble all items- rolling pin, cookie cutters, sticks

*Roll dough 1/4 to 1/2 inch thickness (thick enough that when you slide the stick in it won't break the cookie)

*Cut out shapes and slide stick in from bottom point of heart to about half-way through the cookie

*Place on baking sheet and repeat with remaining dough

*Bake for 12-15 minutes (don't allow to brown)

*Allow to cool and then embellish with candies- add a dab of melted chocolate or royal icing to "glue" candies to cooled cookies

*Allow to sit overnight

*Wrap in bags and tie ribbon and tag on

Give!

Fun adaptations:

*half dip in chocolate and allow to set

*add color to the dough to make pink cookies

*before baking, sprinkle with sanding sugar for a glittery treat

*add a flavor to the dough such as cinnamon or almond

I {heart} Macarons

One of my biggest confessions- I have had a love affair with French macarons for years. I tried one for the very first time, years ago when I was living in Toronto. There was a little bakery that made them, long before they were the baking trend around the world. The first flavor I tried was lavender and it was pure heaven. I developed a healthy obsession with them.

I started making them myself two years ago and most enjoy making lavender and lemon. I prefer to use all natural color and flavor when I make them. I also use organic almond flour and eggs. They are actually quite simple to make if you are handy with a mixer and a pastry bag. And just for Valentine's I made heart-shaped ones to share the love.
While not perfect, I allowed my daughter to use the pastry bag. She had fun making shapes and we filled these chocolate ones with raspberry jam. And then ate them. Once again proving that baking with kids can be fun and the results don't have to be picture-perfect; just a great memory.

A Year to Celebrate

My very first cookbook

2011 was quite a year for me. The first full year of business for Kimberley's Kitchen and a big move up north to embrace country living were two big highlights.

Kimberley's Kitchen completely surpassed all expectations (and plans) and grew faster than I could have imagined. Inspired by all the amazing talent that I have met locally and online, I founded the Tri-Cities Bakers Market in the summer. It was such a rewarding experience to work with so many local bakers and see the community enjoy home-baked treats.

After moving up north, I launched my new logo, designed by Laura of Eye Candy Event Details. I have received such positive feedback about the look and was delighted to be able to use it with my holiday orders.

In an effort to devote my time to my family for our first holiday in our new home, I did little to promote Kimberley's Kitchen for Christmas. It soon became apparent that I was going to have to limit orders for the holidays because I was swamped with custom and online orders. I was able to balance family and business by strategically scheduling myself and saying "no" to quite a few requests (sorry!).

Now that I have had a chance to settle in and establish some local business, I will be building in 2012 in so many new ways. I am very excited for all that is ahead for Kimberley's Kitchen and am truly grateful to all of you for your support.

I constantly remind myself why I set out to do this: create a unique and quality product that delights hearts and tummies, contribute to my family and role-model entrepreneurship to my daughters, and engage in a creative industry that connects me to a community of like-minded women.

So far, so good.

Every little bit counts

For many years I wanted to start a food business. What held me back for so long was the fear that I would not be able to create a business that was unique, successful, and made a positive contribution to the earth and people's lives. I was concerned that I could never be as "green" as I would like.

I am a cautious person so when I jumped in with both feet and took a risk, it was a huge moment for me. The mantra that gave me the courage to leap was "Every little bit counts."

There are lots of great food companies doing great things. My goal was to provide a handcrafted, unique product that people could feel good about buying. I take it very seriously that people give me their money for something I create. I want people to feel good knowing that they help support my family, local businesses and growers, and that a lot of love and passion goes into everything I make.

I know that, as a consumer, I can really feel the difference when I purchase something mass produced versus something local, handmade, and created with heart. I would rather spend more money and buy less if it means my purchases will make a positive contribution to people and the planet.

I have made several decisions to try and do what I can to make a positive difference at Kimberley's Kitchen~

A Handmade Holiday

When I was a little girl, my Mom would host a Christmas Craft Party for the kids. All our friends would gather for cookies and crafts. We would make gingerbread cookies and ornaments and sing along to carols.

This was in a time long before craft stores and online shopping. Craft supplies were a collection of recycled, upcycled, or store bought items from a variety of places. Maybe an art store or fabric store or the grocery store. We didn't have the plethora of crafting materials that are available now, but we did well with what we had and made some charming decorations.

My Mom still has a few of the handmade ornaments, and every year when we pull them out to decorate the tree we talk about the story behind each one. "Remember when..." is how we reminisce about Christmases past.

Now that I am a mom I am continuing the tradition with my daughters. We are busy baking cookies and treats for our holiday enjoyment. We have some craft projects on the go, and I even taught my 3 year old how to sew and she has made Grandma a purse.

A handmade holiday is a tradition I want to continue because I think that there is something very special about handmade gifts and treats for the holidays. Handmade has more heart, often costs less, and can be created with environmentally friendly, local supplies.

Treat Tuesday - Queen Bee Patisserie

This week's Treat Tuesday is a sweet one. I am featuring one of my favorite bakers in BC.

I met the Queen Bee of Queen Bee Patisserie a few months ago when I created and hosted the Tri-Cities Baker's Market in Coquitlam, BC. Queen Bee is actually a friend of a friend and I knew long before I met her that she was an accomplished baker. When I contacted her to participate in the market, and then eventually tried her baking, I became a Fan for Life.

Queen Bee's specialty are the popular "treat du jour", Macaron. Her Macaron flavors are unique and truly delicious. She also specializes in other French- inspired bakery items such as tarts and cookies. And, as if that's not enough to keep her busy, the Queen Bee crafts gourmet dog treats.

Located in Langley, BC and now accepting local orders online, I highly recommend ordering soon for the holiday season. Or you can find the Queen Bee at a local market this fall.

Happy 1 Year Anniversary to Me!

One year ago today I launched Kimberley's Kitchen.

The photo above is one of the first official photos taken by my photographer. I found Bini, of Magna Vita Photography, on Craigslist. She offered to do a trial session with me and if it worked for both of us then I agreed to continue working with her. For that first shoot, we swapped photos for marshmallows. We continued to work together over the year, capturing images of Kimberley's Kitchen product and even some family photos.

Over this past year, I have met and worked with some amazing people. When I launched my business I wasn't expecting such a supportive community. It has been truly inspiring to connect with other bakers and mompreneurs. I have learned from so many of you; many of whom I haven't actually met. The Facebook community of foodie/craft/mompreneurs is huge and overflowing with talent. I have managed to make some meaningful connections with women who are pursuing their passions all over the world. (Like my "twin" from Isle of Man, Audrey, Shannon, Charlotte, Kim, Jackie, Chrissie, and so many more- you all know who you are).

Kimberley's Kitchen has surpassed all my expectations for Year One- business and otherwise. Looking to the year ahead is quite exciting for me too. I have just relocated to a small town north of Vancouver. Smithers, BC is in the heart of the Bulkley Valley and it is a remarkably beautiful and friendly place. I was inspired to do this partly from getting to know so many of you.

Kimberley's Kitchen is in full swing in preparation for Thanksgiving, Halloween, and the Christmas season. I hope to continue to delight you with sweets and treats. And very soon you will see a new look here!

Thank you, thank you, thank you for your support, encouragement, kindness, and loyalty. I appreciate every single comment and "like", I take care with every single order, and I put my heart into all that I do. I am excited for the year to come and look forward to sharing more with you.

August 10th is National S'mores Day!

Did you even know there was such a thing? I didn't until I started making gourmet s'mores kits and researching all things s'mores.

A little s'mores history for you:

The Girl Scouts of America are who you can thank for inventing this campfire treat. Back in 1927, the "recipe" was first published in "Tramping and Trailing with the Girl Scouts" and the name is the contraction of "Some More" please. (I tested this theory by trying to say Some More please with a s'more in my mouth and indeed, it comes out sounding like s'more. Because let's face it, you pop one into your mouth and are already thinking of the next one!)

As soon as I started a marshmallow company I started making gourmet s'mores kits to sell. I handcraft graham crackers and smother them in dark chocolate. Add to that a gourmet marshmallow in one of my classic or seasonal flavors and you have a s'more experience like nothing else.

One Bite at a Time

Starting a small business is a lot like having a baby. Many have drawn this parallel before and now that I have done both I can confidently say that its very true.

There is the idea phase. That moment where your "baby" is conceived. (I vividly remember the moment, more like vision, of gourmet marshmallows. And I have a journal entry/rambling/"plan" that documents it and outlines how I would do it different than the rest).

The anticipation. What shall I name it? What room will it live in? How shall I decorate it? How do I want to announce it?

And then it arrives. Sleepless nights. Time is not your own. Its not what you thought it would be. You get lots of feedback and opinions and advice. Your emotions are haywire. Loss of sleep, new parent anxiety, wondering when life will "get back to normal."

And then there are the Year One milestones. Its like a huge competition. Independant sitting. Crawling. Walking. First words. First foods. Okay, for the real baby. But the business version of this- social media presence, SEO, press, sales, profits.

But just like real babies, our businesses can only grow and develop one step at a time. Certain milestones need to be reached before the next. Babies don't walk before they hold up their head (hopefully!). Businesses don't grow before you lay a foundation.

In all my previous corporate experience, the best business lesson was at Starbucks. (I often tell people that being a Starbucks store manager is the best business school a person can attend). The mantra of One Cup at a Time resonated with me deeply. Passionate about coffee and customer service, I took this to heart. And still do. I truly believe that thriving companies, big and small, are built on the One Customer at a Time philosophy.

At Kimberley's Kitchen, One Bite at a Time is my growth strategy. Why? It has to be. I won't grow until someone tries my gourmet marshmallows and falls in love with it. If they don't, I move on (and try not to take it personally, but it is my baby after all). I really love connecting with each and every customer, achieving milestones one step at a time.

Just like a mom, I nurture my "baby" everyday. Often in the middle of the night. Whenever needed. Always trying to make the best decisions and do the right thing. I have met lots of supportive Mompreneurs along the way and am inspired by them daily. My "baby" will be turning One in the Fall, my favorite time of year. And I am really looking forward to celebrating this first year. Motherhood and Business Ownership have enriched my life and I am definitely better for it.

Now back to the Kitchen, to make a batch of marshmallows for this week's market. Where I will get to connect with my customers and continue to grow One Bite at a Time.

A Very Hungry Caterpillar Picnic

This Spring I hosted a birthday celebration for our daughters, Olivia and Georgia, who turned 1 and 3. I love themed parties and took inspiration from one of our favorite books, Eric Carle's The Very Hungry Caterpillar. With contributions by many talented women, we enjoyed a picnic at Rocky Point Park in Port Moody, BC. A special thank you to Magna Vita Photography for the beautiful party images.

With an unusually cold and rainy May on the west coast, the beautiful tutus made by Atutudes were not worn because we all had to bundle up in our coats. But as you can see, when they arrived in the mail, the girls had lots of fun (and still do) playing dress up. These are the most divine handmade tutus I have ever seen with more tulle than I can imagine.

Invitations were designed by the very talented Brigitte of The Posh Event. Several designs were emailed to me and this is the one I chose. What a special memento for my girls' memory book.

The guests were welcomed to the picnic by a gorgeous banner from Bella Grey Designs. Two strands with printed cardstock in all the colors from the book strung onto soft tulle. A great keepsake!

Welcoming our guests to eat was a handstamped banner from Sweet Stella's that is a work of art. Handcut embellishments of the caterpillar and fruits adorned the Happy Birthday banner- AND the clever artist behind Sweet Stella's, Shannon, made the fruits removable so that the banner could be reused with a different theme. Another beautiful keepsake for a special birthday.

Sweets and treats were available for guests from Kimberley's Kitchen, Em's Gems, and iBakery. The gorgeous butterfly cookies from iBakery are a replica of the butterfly at the end of the book. They taste as good as they look. And each guest got to take one home. Jackie is a true talent when it comes to creating cookies in any design that you could wish for.

Marshmallows by Kimberley's Kitchen

The caterpillar cupcakes didn't survive the travel to the park; poor little thing has a smudged face. But it tasted good.

To decorate the tables I used lovely mini pinwheels from Twirlie Whirlies. The kids loved playing with them and we tucked them into the loot bags at the end of the party. I have a few left and have used them to decorate the girls' bedroom. I am now in love with pinwheels!

Inside the loot bags were gourmet marshmallows from me, Kimberley's Kitchen, as well as toys for the kids. Everyone also received a treat of beautiful handmade soap from Bale & Twine. The most heavenly scented soap that I have ever used and now that my sample is all done I need to order more.

Bale & Twine also contributed handstamped mini silver pendants that we added to the the girls' charm bracelets. A tradition in my family, for every birthday a charm is added. These lovely initial charms were the perfect addition.

Nothing says summer like Lemon Meringue Pie. So I would like to welcome my most popular summer marshmallow- Lemon Meringue Pie. A layer of sugar cookie crust topped with a zesty lemon marshmallow and finished with a layer of vanilla bean marshmallow. Its a mouthful. Shown above on a beautiful adorned stick by Party Paper Scissors, these large bites are perfect for a dessert, favor, or sweet treat with an espresso.

From Market to Table

Saturday was the first ever Tri-Cities Baker's Community Market at the Evergreen Cultural Centre. After months of organizing and coordinating bakers, my vision of a community market dedicated to all things baked and sweet is finally a reality. I am thrilled to say that our first day was a success and we have four more market days to look forward to.

I spoke to the bakers shortly before we opened the doors at 10am. I thanked them for taking a chance on my little market and was frank, "today is a total crap shoot". I was willing to take the chance that maybe, just maybe, the folks in Coquitlam are like me and love to buy quality, handmade baked goods. And I am so grateful that the talented bakers took the leap of faith with me.

Before we had officially opened people started to trickle in. At first I was just relieved to see some customers buying. And then the steady flow of people continued until lunch. We had a little burst of shoppers after lunch and at that point, most bakers had sold out of most of their goods so it was definitely time to pack up.

I have been passionately engaged in the food movement for many years and am a firm believer in local, organic, and handmade. There is an amazing burst of food markets happening all over Canada and the US. One of the best farmers markets I have been to is in Las Vegas, of all places. The experience of buying food from the hands that picked it, mixed it and baked it is meaningful and rewarding. Not all of us can live (or even want to) from Farm to Table. But many of us can certainly take part in Market to Table.

Market to Table is a chance for us to genuinely connect with growers and producers. An opportunity for us to contribute to a family's way of life. An experience that is authentic and down to earth. When we spend our money at a market we are Voting with our Fork, as I like to say. We are escaping our addiction to plastic and our need to shop in sterile environments with no personality. We are acknowledging that food grown and made with love, by people who have a true passion for what they do, imapcts us and our food experience. It just tastes better.

My vision for this market in my community was that people appreciate handmade baked goods. Many of us have memories of our grandmothers and mothers baking and cooking. I knew I was on to something when almost every customer on Saturday said that they were so happy to buy homemade baked goods. When I talked to people they were thrilled to have something like this, with a variety of baked goods to buy, enjoy and share. They acknowledged the passion and dedication. One customer said to me, "I don't know how all you mothers with young children do this". We love it and love seeing people enjoy what we bake, so that makes it all worth it.

The best part of the day for me was when my babysitter dropped by with my two daughters. My 3 year old was thrilled to see Mommy's Baker's Market and I was so happy to have them see what I was doing. They also had a fun day at the park and I got to do something that I love. Helping people eat from Market to Table.

The Magic of Marshmallows

Marshmallow, cookies, chocolate, crushed pecans = a handful of heaven. Since creating the marshmallow slider, I have discovered the magic of marshmallows. Biting into this handmade confection reminds you of something old-fashioned, and at the same time you know you have never had anything like it.

I fell in love with marshmallows AFTER I decided to start a marshmallow company. I knew I loved them. I knew I loved making them. But true love really blossomed when I starting serving them to friends, family, and customers. When I first tell people that I make marshmallows, I usually get some funny looks. When I start to describe what I make, some people look confused and others gasp "that sounds amazing!" But the moment people take a bite, that is what I live for. That magical moment.

The best reaction so far has been from my mom. I gave her a pack of Vanilla Bean Marshmallows in her stocking at Christmas (just like so many of my customers!). She bit into one square and sighed. She vowed to save them and only have one a day. I don't think they lasted 6 days. I realized, in that moment, the magic of marshmallows. They are a reminder of the past, when confections were simpler, and dare I say sometimes better. Add to that the gourmet, handcrafted quality of a confection made with organic vanilla beans. And I think we all agree that something made from the heart has a spirit, unlike factory-produced food.

As I continue to experiment, plan, sample, and sell, I constantly remind myself of that little moment of happiness that my customers experience when they bite into a Kimberley's Kitchen marshmallow. It is the reason I was willing to leave a lucrative corporate (and stable!) HR career to pursue my passion. It is the reason my family puts up with me working really late nights, posting on Facebook in the middle of the day, and driving around town to find the best local ingredients. It is why I won't compromise my values in what I do. That magical moment IS why I do this.

I would like to thank everyone for all the support I have received so far (especially from my sister, my "VP of Marketing" whom I pay in marshmallows). And a huge thank you to all of my customers, Facebook fans, Twitter followers, and everyone who will try my products this year. Holiday at the Baker's Market

I am thrilled to be at the Vancouver Baker's Market for the next three weeks. Each Saturday, until December 11th, I will be selling my gourmet marshmallows, marshmallow sliders, marshmallow pops, holiday cookies, holiday candies, and my Auntie John's Cheesy Shortbread. I will also be debuting Smarshmallows- a confection invented by my 2 1/2 year old daughter. They are delicious.

Why I love Martha Stewart and how she broke my toe.

If you know me you know that I LOVE Martha. And I have found that people either really, really love her or really, really hate her. My love for her started many years ago; literally the first year that she published her magazine. I own every issue of Martha Stewart Living (with the exception of about 3 issues that were not returned to me) and have moved my collection to every home in Toronto and Vancouver over and over again. I have been a subscriber to 3 Martha magazines, watched her shows, visited her website about 12 times a day, and purchased her products at Macy's, Michaels, Home Depot, Kmart- you name it.

So, why do I LOVE her? She works very hard. Every day. I admire that she started her catering business when she was 40 and that blossomed into publishing and then creating a brand and media corporation that shapes our culture. She made home-making cool again. She took her passion and turned it into her life's work.

A few weeks ago, while baking, I reached for one of my cookbooks on a high shelf, and dropped it on my foot. I fell to the ground in pain and discovered that I had, indeed, fractured my toe. It was my favorite Martha Stewart cookbook. I can't be angry with her. After all, I have learned so much from her. But most of all, I have learned that work is about life.

I used to make a list of "career goals" and "life goals". One day I realized that the list should all be one and that my goals in both work and personal life are the same. And if they are not, then something will suffer. This is the secret to work-life balance. A phrase we all know and perhaps try to achieve. But I think it is misleeding. The "balance" isn't so much equal time/effort to two parts of our life but rather all aspects of our life being forgiving and accomodating. This realization helped me to respect my time more (because if I don't respect it, who else will?) and discover how I can create work out of my passion. Food.

My toe is starting to feel better. Which is good because I have a lot of orders to do in the coming weeks. And if I am going to have a workplace injury, at least it was in my kitchen, with Martha Stewart.

The Story of my Almond Butter Crunch

I grew up with a Dad that loves to cook. He has his specialties but what may surprise many, is that he loves to make candy. Often we would rent a movie and he would pause it for a bit, only to return from the kitchen with bowls of candy corn.

So naturally, I inherited Dad's sweet tooth. But we didn't grow up with a lot of candy and "junk" food in the house. The first time I had sugared cereal, for example, was summer camp in grade 9. I think I lived on Fruit Loops for two weeks for the sheer novelty. I grew up with my Mom cooking beautiful food, eating salmon that my Dad caught on fishing trips, walking to the market every weekend for our groceries and I was often sent to school with french bread and cheese in my lunch. I developed a rather sophisticated palette, I would say, for a teenager. (My Mother will never forget my Vegetarian period inspired by Sting- announcing it at the dinner table one night, all the while holding down a job at Wendy's).

Holidays were really the only time that we had a lot of sweets. One of my Dad's favorites is Almond Roca. Truly, a good confection with the combination of salty, sweet, buttery, crunch, chocolate. Mmmm. I am always trying to think of new recipes to test for Kimberley's Kitchen and my Dad's love of candy provides a lot of inspiration. I remembered recently his love for Almond Roca and set out to make something like it.

My Almond Butter Crunch has been my best seller since I started making it and it only has 4 ingredients. I love the simplicity of it and yet the final product is complex and one of those things most people won't take the time to make for themselves. That is why I make it. So that you can enjoy a treat made with simple stuff, inspired by my Dad.

The Anatomy of a Marshmallow Slider

I love gourmet marshmallows. And chocolate, and sprinkles, and cookies. And then I though "let's put it all together!" And that is how I created the Marshmallow Slider.

I was stuck on a name for the cookie/sandwich/confection that I started making and selling. My cousin coined the term "slider" (as in burger) and it fits perfectly. Now, I create Marshmallow Sliders in over 20 flavors and shapes with some very festive ones for the holidays. Peppermint with crushed candy cane, Gingerbread with Smarties, Eggnog, and the very popular Coconut.

The anatomy of a marshmallow slider is simple- two cookies, chocolate, handmade marshmallow, more chocolate, sprinkles/nuts/candies. And there you have it.

Take a look!

Here I have started with two sugar cookies, a vanilla bean marshmallow, white chocolate, and chocolate sprinkles.

I then apply the "glue"- the white chocolate to the inside of each cookie.

I place the marshmallow and "glue" the other cookie with the chocolate.

I press it together and allow it to set- almost ready!

A little more chocolate and then the sprinkles!

And there we have it- a delicious Vanilla Bean Marshmallow Slider!

The Sisterhood of Motherhood

Having two daughters has me thinking a lot about sisterhood these days. I have one sister (no brothers, except for my brother-in-law who really has been a brother to me). She is older than me so by the time I was aware of the world, she was off living her life and we didn't have that much to do with each other. When I was 9 she moved away to travel and work and I rarely saw her until she moved back to Vancouver when I was 17. My sister and I started to get to know each other but we weren't very close. I moved to Toronto, she got married and had kids, we lived very different lives.

But all of that changed the day I told her that I was pregnant with my first baby. I think she was more excited than I was, and even though we had yet to find out the sex of the baby she bought it shoes. Of course. And luckily, it was a girl. My sister has two boys (amazing boys whom I love) so having a niece was going to be fun for her. She bought every girly thing you can imagine. But it wasn't just about the baby. I instantly felt a connection with my sister. One I never had. I had joined the club. Motherhood.

Since then, I have had a second girl. My sister is so close to both girls and has been the Aunt Extraordinaire. My oldest daughter simply calls her Aunty. But for me, having a sister that is a mom that I admire, someone I can talk to about pregnancy, recovery from c-sections, raising babies, feeding children, life with children, is something that has really changed me. I wasn't expecting to feel a connection with her in this way.

Now I have the sister I never really had before. And I am so happy that we are close now and sharing our lives now instead of wishing we had stayed close and kept in touch. Because now is when I really need a sister. Because Motherhood is the hardest thing I have ever done. It is also the part of my life that brings me the greatest joy and that I feel most proud of. And now I get to share it with my sister. The sisterhood of Motherhood.

Confessions, and then some

For a very long time I have wanted to launch a business. I have hundreds of ideas swirling in my head (not all of them good, mind you) and a huge desire to go out and be my own boss. Circumstances didn't allow for it until now. But more than that, I was in my own way.

I have big ideas. I have big vision. And that actually can really hinder the process when it is unrealistic to start big. It was so hard for me to imagine starting small. It never felt right. I never thought I would be satisfied to have only a piece of the vision realized, not always as perfect as I imagined.

Motherhood has taught me to let go of perfectionism. Mostly to keep my sanity (and that of my family's) but also because I don't want my daughters to grow up feeling that they aren't perfect enough for me. I grew up with a mother that is a perfectionist. And in many ways it was good because some of my strong qualities come from her- attention to detail, a desire to do something well, high expectations of myself. But what I have learned is that perfectionism is exhausting, pointless (because nothing will ever be perfect), and takes our focus away from the present.

When I worked for Starbucks, we talked about "one cup at a time". The idea was that there is purpose in focusing on serving one single cup of coffee and doing it well. That has really stuck with me and I like thinking about that when I sell one tasty marshmallow at the Baker's Market. My very first sale at my last market date was to a very nice couple. They said part of the reason they were buying from me is that I was the first person to speak to them. I was simply present.

My intention with my children and now with my new "baby", Kimberley's Kitchen, is to be present, accept what is right in front of me, and accept myself exactly as I am in this moment. It isn't easy. Believe me. But the pursuit of being present instead of perfect has allowed me to accept the small vision, the little successes. And it makes me a better businesswoman because I am genuinely thrilled to fill a small order that hopefully will bring some joy and delight to a family. One marshmallow at a time.

My Great Aunt was Kathleen Wilkinson. From the time that she was a little girl she was called John. And she kept that name and we all called her Aunty John. For as long as I can remember, she baked these yummy shortbreads for Christmas and gave them to friends and family, always wrapped up and packaged in little bowls. Every Christmas, we looked forward to Aunty John's Cheesy Shortbread. As soon as I was old enough to bake on my own, I asked my Dad for the recipe and started making them. Now I bake them every Christmas. I promise that you will love them and they will become a family favorite for you too.

Confessions of a Confectionista

Food is my religion. I am not trying to be funny. I am more passionate about food, and have stronger beliefs about food, than anything else. Of course, I grew up "Christian". My parents didn't take me to church but when I was about 8 years old I asked if I could go to Sunday School (maybe the only kid ever to ask to go to Sunday School!). I wanted to go to the Baptist Church because I liked the music. I quite enjoyed going to church, actually. Even at that age I had pretty strong ideas about religion and really enjoyed learning about the Bible. (I had already decided that the 7 days it took God to create the world was a metaphor for a longer span of time and that somewhere in there was the Big Bang) When I was in high school and had many Jewish friends, I enjoyed learning about Judaism and one friend even taught me a little Hebrew (I can still count to ten and sing a preschool song). I have always enjoyed learning about religions. But I definitely don't practice organized religion. I celebrate the Christian holidays like many people, a tree, an Easter egg. But in the last few years, my beliefs about food have become my religion.

When I was in my early twenties I was diagnosed with a chronic pain condition. I started to read a lot about holistic health and I bought Dr. Andrew Weil's first book. That is when I started eating organic, taking supplements like selenium and being more conscious of what "went in". I have been following many of Michael Pollan's Food Rules for years. I have had many people make negative comments to me about this in the past, before it was cool. And now that I feed my children this way, my beliefs are stronger and more important to me.

I believe in knowing what is in my food, where it comes from, who owns the company that grows it/makes it, and what kind of footprint it has. My priorities are health, environmental and social impact. I believe that food and sleep have a significant impact on childrens' development and on our long term health and ability to stave off major diseases. I believe that the medical community is realizing that food has more to do with cancer and other diseases than we ever thought possible.

To start a food business seems natural for someone with such passion, but why a candy and cookie business? To start, baking is my true love. And I bake almost every day for my family- bread, quick breads, muffins, all sorts of things that are made with very healthy, organic ingredients. But I also like to bake treats. We all enjoy treats from time to time. And we should. I want to know exactly what my kids are eating when they have a treat. I want to offer people treats that they can enjoy and know exactly what is in them. Sure, some of my treats have some refined ingredients. But some of them are wholesome, good for you baked goods that make having a treat guilt-free. I believe in moderation. A little chocolate or a marshmallow or two, isn't so bad. In fact, if you really enjoy it then I think it's a good thing.

Food is to be enjoyed, loved, savoured- and I believe you can only do this if you know what you are eating. I try not to preach my beliefs about food. I will share what I believe and you decide. But know that I really care about what I am making and selling. Amen.

Welcome to Kimberley's Kitchen. My little one-woman venture into confections, baked goods, and sweeties.

Confession #1: I am by no means a professional. By that I mean I have NOT gone to culinary school or apprenticed as a candy-maker. I am self-made. In every way. My background is performing arts and human resources. I do own every issue of Martha Stewart Living (and moved my boxes and boxes of magazines around to every apartment and house) I grew up watching Julia with my mom. My parents both taught me in the kitchen. I have been a foodie my whole adult life. So, naturally, I launched a food business.

Confession #2: I ditched being a perfectionist years ago (around the time I had my first baby) BUT confections do tend to fill my perfectionist side. It isn't "a dash of this and a dash of that" type cooking. It is exact. As in, I am not making chocolate today because the humidity is just too high. I calibrate my candy thermometer every time I use it. I fume when my marshmallow goes 30 seconds too long in the mixer (I can taste the difference). So, this type of food business suits me perfectly. I get to be a little more laid back in family life and a little more picky in my food life.

My Mom gave me my first cookbook when I was 6 years old. I have been cooking and baking ever since. I developed a love of candy-making at an early age. One of my fondest childhood memories is of my English Granny coming home from working in the Purdy’s factory. She always smelled like chocolate.

Now a mother of two girls, I am launching my food business specializing in confections and baked goods. I truly enjoy baking and sharing with friends and family. And now I am delighted to share my treats with you. Enjoy!
